Thai Style Chicken


Ingredients

2 lbs. of boneless chicken breast

2 tablespoons of coconut oil

2 cups of peas

1large onion diced

2 carrots chopped

2 celery stalks chopped

juice of 1 lemon

lemon zest

4 cloves of garlic

salt 

adobo

cumin

coriander

bay leaf

Directions

Cube chicken and sauté in 1 tablespoon of coconut oil,,,do not stir…let chicken brown for about 5 minutes and then turn to brown on other side for another 5 minutes.  Remove from pan. Add remaining coconut oil and sauté onions and garlic with a sprinkle of salt for 2 minutes add carrots and celery and sauté 2 minutes longer, now add your peas and sauté for 5 minutes.  You can add a bit of broth if it is getting too dry. Now add 1 cup of coconut milk, one cup of broth and spices, let flavors combine for about 5 minutes.  Now add your chicken back to your pan, reduce heat and cook for about 45 minutes. You may need a bit more broth!
