Quinoa-Zucchini Pilaf


Ingredients

2 cups quinoa

4 cups water

1 onion, chopped

2 cloves garlic, minced

2 tablespoons extra virgin olive oil 

1 1⁄2 cups sliced mushrooms

2 zucchinis, thinly sliced

2 tablespoons chopped parsley 

Salt to taste 

Directions

Prepare 2 cups of quinoa following instructions on package.

Sautee onion and 2 cloves of minced garlic in 2 tablespoons of extra virgin olive oil. 

Add mushrooms, and zucchini; cook until veggies are tender.

Just before veggies are done stir in chopped parsley.

Fluff quinoa in a serving bowl and add veggies.

Combine and serve.

Salt to taste.
