Portuguese Kale Potato Soup


Yields

4-6 servings

Ingredients

6 turkey sausage

1 bunch of lacing kale (deveined)

3 medium russet potatoes, diced (sub sweet potato)

3 carrots, sliced

6 cups of chicken broth

1 large onion diced

3 garlic cloves minced

3 tablespoons of extra-virgin olive oil

¼ cup fresh chopped parsley

3/4 teaspoon of Himalayan sea salt

¼ teaspoon of red pepper flakes


Directions

  1. Heat 1 tablespoon of olive oil in a stockpot and saute sausage until browned on all sides and set aside.
  2. Add two more tablepoons of olive oil to the pot and saute diced onion, potatoes and sliced carrots for about 5 minutes. Add minced garlic and saute for another minute.  Add chopped kale and saute until wilted.
  3. Add 6 cups of chicken broth and bring to a boil.  Slice the cooled sausage and return to the pot.  Let soup simmer at medium-low heat for 45 minutes. Season with salt, and a red pepper flakes.  Stir in chopped parsley and serve
