Organic Greens of any kind are great with this recipe. I enjoy a mix of Arugula, Endive, and Radicchio. Baby spinach is also a great option.
2 medium beets
1 avocado
Detox Lemon Dressing
Lemon Dressing:
1⁄4 cup EVOO
juice of 1 lemon
1 clove garlic pressed
1 tsp raw honey
1⁄2 tsp Dijon mustard
Sea Salt to taste
Salad
Wash beets carefully. Do not peel. Cut in quarters and steam for 15 minutes or until tender. Pierce with a fork to test. Let cool and then peel. Cut beets into strips. If your hands become stained, use lemon juice to remove the staining. Slice your avocado and toss with some lemon juice so it doesn’t turn brown.
Dressing
Combine ingredients and whisk until creamy.
Arrange greens on a plate. Top with beets and avocado. Drizzle salad with your lemon dressing. Toss and enjoy!
