Homemade Almond Milk


Prep Notes

Soak almonds overnight or up to 2 days

Discard water after soaking and rinse almonds before making your milk



Yields

2 Cups

Ingredients

1 cup of organic almonds

2 cups of purified water

Pinch of salt

Vanilla extract (optional)

Directions

1. Process soaked almonds in a high speed blender for 2 minutes.

2. Place a mesh strainer over a bowl and line the strainer with your cheesecloth.

3. Pour about a cup of almond mixture onto the cloth, fold cloth over the almond mixture and squeeze with your hands, until you have extracted as much liquid as possible.  Repeat this step until you have used all the almond mixture.

4. Store almond milk in a glass jar.

5. Discard almond pulp or save for later use.

Can be refrigerated for up to 2-3 days


Notes

You can use almond pulp in smoothies or recipes.  

You can dehydrate in a low temperature oven for about 2 hours and then freeze fro later use.
