Grandma’s Chicken Soup


Ingredients

1 organic chicken

1 large onion

4 carrots

4 celery stalks

3 cloves of garlic

2 bay leaves

Spring water

2 tablespoons of “real salt” or sea salt

2 tablespoons of organic lemon juice or apple cider vinegar

1 bunch of parsley or cilantro

Directions

Place whole chicken in a stockpot. Cover chicken with just enough spring water to submerge the bird, approximately 1 inch above the chicken. Bring to a boil and then reduce heat to medium. Remove scum that rises to top.  

At this point add the rest of the ingredients. Cover the pot; reduce to a simmer and let cook for 3-4 hours.  

Bone broths such as Chicken Soup are medicinal to our body, especially the digestive system.  This recipe provides all you need for a nutritious winter meal on a cold night!  After stock is cooked, remove chicken with a slotted spoon.  You can strain the soup; add the carrots and bits of chicken.  There will be plenty of chicken stock left over that you can freeze for future use or create other soup recipes.
