1 organic chicken
1 large onion
4 carrots
4 celery stalks
3 cloves of garlic
2 bay leaves
Spring water
2 tablespoons of “real salt” or sea salt
2 tablespoons of organic lemon juice or apple cider vinegar
1 bunch of parsley or cilantro
Place whole chicken in a stockpot. Cover chicken with just enough spring water to submerge the bird, approximately 1 inch above the chicken. Bring to a boil and then reduce heat to medium. Remove scum that rises to top.
At this point add the rest of the ingredients. Cover the pot; reduce to a simmer and let cook for 3-4 hours.

After stock is cooked, remove chicken with a slotted spoon. You can strain the soup; add the carrots and bits of chicken.
