Gingered turkey meatballs

Ingredients

1 package organic ground turkey meat

1 5oz. package of shiitake mushrooms

1 bunch scallions chopped fine

1 carrot chopped fine

1 tablespoon coconut oil

1 chia egg = 1 tablespoon chia seeds in 3 tablespoons water

¼ cup chopped cilantro

1 teaspoon garlic powder

½ teaspoon cumin powder

1/2 teaspoon of curry powder

½ teaspoon Himalayan salt

Dash of black pepper

Directions

  1. Preheat oven to 400 degrees
  2. Heat a skillet and sauce scallions, shiitake mushrooms and carrots in a tablespoon of coconut oil for about 2 minutes, set aside and cool for 10 minutes.
  3. In a bowl mix together turkey meat, spices, chia egg, cilantro and cooled vegetables
  4. Shape meatballs into small rounds.
  5. Line a cookie tray with parchment paper and place meatballs on the tray
  6. Bake for 30 minutes
