1 cup frozen blackberries
1⁄4 cup blackberries for topping
1⁄4 cup unsweetened coconut flakes and 1 tablespoon for topping
3⁄4 cup coconut milk or your choice of dairy-free milk
2 tablespoons of chia seeds
1 tablespoon of almond butter
1 cup baby spinach
1 tsp pumpkin seeds for topping
1⁄4 tsp of cinnamon
1 sliver of ginger
1/8 of teaspoon of cardamom
Coconut yogurt for topping
Add milk, chia seeds, spinach, frozen blackberries, coconut flakes, almond butter, cinnamon,ginger and cardamom into a blender. Give the mixture a few pulses, should be on the thickerside so that you can enjoy with a spoon.
Place your mixture into a bowl and top with pumpkin seeds, coconut flakes, fresh blackberriesand a dollop of unsweetened coconut yogurt.
