Banana Walnut Muffins

Ingredients

3 medium bananas

13/4 cup of King Arthur's Measure for Measure Flour

2 large free-range organic eggs

1/2 cup avocado oil

3/4 cup of coconut sugar

2 teaspoons baking powder

1/4 teaspoon baking soda

1/2 teaspoon cinnamon

1/2 teaspoon sea salt

1 teaspoon pure vanilla extract

1/2 cup chopped walnuts

Directions

1. Preheat oven to 375 degrees.

2. Grease a 12-cup muffin tin with extra virgin coconut oil or grass-fed butter

3. Mix all dry ingredients together and set aside

4. Using a food processor combine bananas, eggs, oil and vanilla

5. Add wet ingredients to the dry ingredients and stir to combine

6. Scoop mixture into muffin tins, about 2/3 filled and place in oven for approximately 20 minutes.  You can test by inserting a toothpick and it should come out clean.
